A partir de la problemática, se hace necesario conocer en qué medida las actividades inherentes al manejo y gestión de productos cárnicos responden a las leyes y normas establecidas en el país. Para ello, se hizo una revisión de la normativa y disposiciones legales vigentes, que permitió conocer los aspectos teóricos que fundamentan la investigación. Posteriormente, la investigación in situ permitió la recopilación de información primaria, a través de la entrevista al Presidente del Directorio y observación simple y abierta de las actividades propias del rubro, lo que permitió constatar las operaciones de la Cooperativa de Proveedores de Carne de de Chuquisaca COPROCACH con las disposiciones legales que regulan su funcionamiento. Based on the problem, it is necessary to know to what extent the activities inherent to the handling and management of meat products respond to the laws and regulations established in the country. To do this, a review of the regulations and legal provisions in force was made, which allowed to know the theoretical aspects that support the investigation. Subsequently, the on-site investigation allowed the collection of primary information, through the interview to the Chairman of the Board and simple and open observation of the activities of the field, which allowed to verify the operations of the Cooperativa de Proveedores de Carne de Chuquisaca COPROCACH with the legal provisions that regulate its operation.
